• 400 g of I Cucci Sardinian Gnocchi
• 150 g of I Cucci Pistachio Pesto
• 50 g of salted ricotta flakes
• 150 g of cherry tomatoes
• 2 tablespoons of extra virgin olive oil
• 1 clove of garlic
• 1 sprig of fresh rosemary
• Salt and pepper to taste
• A few chopped pistachios for garnish (optional)

• 1 and 1/2 sprigs of fresh rosemary
• Salt and pepper to taste
• A few chopped pistachios for garnish (optional)
Step-by-step procedure
1. To prepare the confit tomatoes: Preheat the oven to 150°C. Arrange the tomatoes on a baking sheet with a drizzle of extra virgin olive oil, a crushed garlic clove, and the rosemary. Bake for 40 minutes until the tomatoes are soft and caramelized.
2. Bring salted water to a boil in a large pot and cook the Sardinian gnocchi until they rise to the surface (3-4 minutes).
